Marinated Onions From George Fassett Recipe

Ingredients
  • 2 Garlic cloves, finely sliced
  • 1 Lemon, sliced
  • 1 can pitted ripe olives, drained
  • 2 tb Red wine vinegar
  • 1/2 c sliced onion
  • 1 1/2 To 2 c water
  • 1 ts Dried thyme leaves
  • 1 jar pimiento-stuffed olive, drained

Directions
  • Step #1 In 1 quart nonmetal container, mix all ingredients except water.
  • Step #2 Add enough water to cover olives.
  • Step #3 Cover; put in the fridge 2 to 3 days.
  • Step #4 To serve, remove olives with slotted spoon.
  • Step #5 Yield: 4 c; about 20 servings.
