Chicken And Corn Chowder With Thyme Recipe

Ingredients
  • 2 c half-and-half
  • 1 onion, sliced
  • 4 green onions, sliced
  • 4 skinless, boneless chicken breast halves - cut into cubes
  • 4 c frozen corn kernels
  • salt to taste
  • ground black pepper to taste
  • 3 tbsps sliced fresh thyme
  • 2 (14.5 oz) cans chicken broth
  • 6 slices bacon, sliced
  • 2 large potatoes, sliced

Directions
  • Step #1 In a large pot, cook bacon until crisp.
  • Step #2 Remove bacon from the pan, & set aside.
  • Step #3 Drain all but 3 tbsps of the bacon fat from the pan.
  • Step #4 Saute the onions in the bacon fat.
  • Step #5 Add broth & the potato to the pot.
  • Step #6 Cover, & let simmer for 10 mins.
  • Step #7 Add corn, chicken, & thyme.
  • Step #8 Cover.
  • Step #9 Simmer until the chicken is cooked & the vegetables are tender, about 15 mins.
  • Step #10 Stir half & half into the soup, & let simmer for 2 mins.
  • Step #11 Spice up with salt & pepper to taste.
  • Step #12 Ladle into bowls, & sprinkle with the bacon & scallions.
  • Step #13 Serve.
