Ingredients
  • Into square pieces
  • 1 x Small sweet red pepper, cut
  • 8 oz Whole fresh mushrooms

Directions
  • Step #1 Place mushrooms, zucchini or summer squash & red pepper in plastic bag set in deep bowl.
  • Step #2 For marinade, pepper, oil, salt, in small mixing bowl stir this together lemon juice, sugar, tarragon or oregano, & garlic.
  • Step #3 Mix well.
  • Step #4 Pour marinade over veggies in bag.
  • Step #5 Seal bag.
  • Step #6 Marinate vegetables in fridge for 8 hrs or overnight, turning bag every once in awhile.
  • Step #7 To serve, pour veggies & marinade into serving dish.
  • Step #8 serve this with toothpicks.
  • Step #9 Makes 8 (2/3 c) servings.
