Mark's Carrot Cake Recipe

Ingredients
  • 1/2 c Olive oil
  • 1/3 c Balsamic vinegar
  • 1/2 c Vegetable oil
  • 1/2 Lime; juiced
  • 1/2 tb Marjoram
  • 1 md Red bell pepper - roasted, peeled & sliced
  • 3 tb Toasted pine nuts
  • 1 ts sliced shallots

Directions
  • Step #1 Strain the lime juice into a large mixing bowl with the vinegar.
  • Step #2 Add shallots & slowly whisk in both oils.
  • Step #3 add in the remaining ingredients and allow the herb to infuse for 10 to 15 mins before serving.
