Mark's Jack Zucchini Chicken Recipe

Ingredients
  • 1 lg Onion, finely sliced
  • 1 3" piece ginger, sliced
  • Soy sauce
  • 1 md Green pepper, sliced
  • 4 c Cooked rice
  • 1/2 ts Chili pieces
  • Salt & pepper, to taste
  • 1 lg Carrot, scrubbed & sliced
  • 1/2 c Frozen corn &/or peas
  • 2 Garlic cloves, minced

Directions
  • Step #1 Ensure that the rice has been cooked ahead of time & is well cooled.
  • Step #2 Heat about 2 to 3 tb vegetable oil in a wok.
  • Step #3 When hot, add onions & garlic & fry for 3 mins.
  • Step #4 Add the carrots & stir-fry for 2 mins.
  • Step #5 Add the rest of the vegetables & continue to stir-fry for 2 or 3 mins.
  • Step #6 Toss in the chili pieces & ginger root.
  • Step #7 Cook for a few seconds.
  • Step #8 Carefully stir in the the cold rice.
  • Step #9 Lower heat & continue to cook, stirring every once in awhile for 5 mins.
  • Step #10 Add enough soy sauce to coat the rice & cook for a further 5 mins on low heat, stirring often to prevent sticking.
  • Step #11 Spice up if desired with salt & pepper.
  • Step #12 Serve when heated through.
  • Step #13 This goes great with spicy tofu dishes or works well on its own as a main dish in its own right.
  • Step #14 If you desire something hotter, add more chili pieces.
  • Step #15 Use pieces rather than powder because they are hotter.
  • Step #16 For a variation, I sometimes toss in a few strips of tofu just before adding the spices.
