Martha Washington's Plum Pudding Recipe

Ingredients
  • 1 tb Light corn ssyrup
  • 1 ds Salt
  • 3/4 c Water
  • 4 oz Unsweetened Chocolate
  • 4 tb Butter
  • 1 1/2 c Sugar
  • 1 ts Vanilla

Directions
  • Step #1 mix sugar, water, corn syrup, & salt in small saucepan.
  • Step #2 Bring quickly to a boil, stirring only until sugar is dissolved.
  • Step #3 Then boil, without stirring, until mixture forms a very soft ball in cold water (232 degrees F.
  • Step #4 --.
  • Step #5 Cool to lukewarm ( 110 degrees F.
  • Step #6 ).
  • Step #7 Melt chocolate in medium saucepan over boiling water.
  • Step #8 Add butter & vanilla.
  • Step #9 Remove from boiling water.
  • Step #10 Add syrup slowly, stirring constantly.
  • Step #11 Continue stirring until smooth & thickened.
  • Step #12 Place again over boiling water & stir until froshng is softened & of right consistency to spread.
  • Step #13 remove this from boiling water & spread on cake.
  • Step #14 If necessary, place over hot water to keep soft while spreading.
  • Step #15 Makes enough frosting to cover tops and sides of two 7 1/2x9-inch layers.
