Marty Feins' Lo Mein Shrimp-chicken-pork-beef Recipe

Ingredients
  • 1 c Shredded chicken
  • 1/2 c Sherry1
  • 6 tb Rice wine vinegar
  • 1/2 c Cloud ears
  • 1/2 ts Hot oil
  • 4 Scallions garn
  • 2 Bean curds cut 9 pieces
  • 1/4 ts White pepper
  • 1/2 ts Salt
  • 1 c Bamboo strips julliene
  • 1/2 lb Roast pork, shredded
  • 2 tb Sesame oil
  • 7 tb Cornstarch in 1 c water
  • 12 c Chicken stock
  • 3 ts Light soy
  • 1/2 c Golden needles
  • 2 Eggs, beaten

Directions
  • Step #1 Soak ears & needles 20 mins in warm water, save water.
  • Step #2 Shred ears, halve needles.
  • Step #3 Shred chicken, mix with 2 tbs cornstarch and sherry, pork, set aside.
  • Step #4 mix vinegar, pepper, hot oil & sesame oil in bowl & set aside.
  • Step #5 Boil chicken stock, add tofu, boil 1 min, add pork-chicken mixture, salt & soy, needles & ears.
  • Step #6 Boil 1 min, mix rest of cornstarch with water & add to soup.
  • Step #7 (use water from ears & needles for mixing) lower heat, add vinegar mixture, adjust Spice uping.
  • Step #8 slowly stir in the beaten eggs, garnish with cut scallions.
  • Step #9 Serve in heated bowls.
