Mary Jo's Poppy Seed Cake Recipe

Ingredients
  • 2 tb Dry yeast
  • 3 c Warm water
  • 1/2 c Dry milk
  • 1 ts Salt
  • 2 tb Sugar
  • 8 c Flour, divided
  • 6 tb Vegetable oil

Directions
  • Step #1 In a large bowl, dissolve the yeast in the water.
  • Step #2 Add the sugar, salt & dry milk & bland.
  • Step #3 Add half the flour & whisk for 1 min.
  • Step #4 Set the mixture aside for 1 hr, or until the sponge falls back on itself.
  • Step #5 Beat in the oil.
  • Step #6 Add the remaining flour & mix well.
  • Step #7 Add extra flour if necessary to make a fairly stiff dough.
  • Step #8 With floured hands cut out about 20 four-oz pieces of dough and form them into 3-inch patties.
  • Step #9 Place the patties on a greased cookie sheet & let rise about half & hr, or until they are doubled in bulk.
  • Step #10 Preheat griddle to 325F to 350 F & cook approximately 7 mins per side.
  • Step #11 For Cinnamon-Raisin English Muffins: Add 1 tbs.
  • Step #12 cinnamon & 1 c raisins with the remaining flour.
  • Step #13 For whole wheat English muffins: Substitute "crunchy whole wheat flour mix" for white flour: : 2 c whole wheat flour : 2 c cracked wheat flour : 4 c unbleached white flour.
