Mary's Seafood Gumbo Recipe

Ingredients
  • 8 Inch baked pie shell
  • 3 Egg yolks
  • 1/2 c Sugar
  • 1/4 ts Salt
  • 1 ts Vanilla
  • 2 c Milk
  • 4 tb Flour
  • 1 c Raisins
  • 1/2 ts Lemon extract
  • 1/4 c Water

Directions
  • Step #1 1.
  • Step #2 Mix raisins with water & heat slowly, covered for 5 min.
  • Step #3 mix together sugar, egg yolks, flour, & salt.
  • Step #4 Add milk & vanilla.
  • Step #5 2.
  • Step #6 Cook in double boiler until thick & creamy.
  • Step #7 Add raisin mixture.
  • Step #8 Cool 3 mins.
  • Step #9 Add extract & pour this into cool shell.
  • Step #10 3.
  • Step #11 Cover with meringue made by beating together 3 egg whiltes, 1/4 tsp.
  • Step #12 cream of tartar, 6 Tb.
  • Step #13 sugar & 1/2 ts.
  • Step #14 vanilla.
  • Step #15 4.
  • Step #16 bake this at 400F for 10 mins, or until meringue browns.
