Masaman (muslim) Curry Paste (kruang Koeng Ma Recipe

Ingredients
  • 1/2 c Water
  • 2 lb Potatoes, cubed
  • 4 ea Garlic cloves, sliced
  • 2 lb Mushrooms, halved
  • Salt
  • 1/4 c Ghee
  • 1 ts Turmeric
  • 1 tb Garam masala
  • 1/4 ts Dried red chilies
  • 1 lg Onion, sliced
  • 1 c Peas, fresh or frozen
  • 1 ea 1" piece ginger, sliced

Directions
  • Step #1 Heat ghee in large pot.
  • Step #2 Add onion & garlic & fry till browned.
  • Step #3 Stir in ginger & fry for 2 mins.
  • Step #4 Add garam masala, turmeric & chili, stirring for a min.
  • Step #5 stir in the potatoes, salt & water.
  • Step #6 Mix well, bring to a boil & simmer for 8 to 10 mins.
  • Step #7 Stir every once in awhile.
  • Step #8 Add mushrooms & peas & stir.
  • Step #9 Cook, covered, for 5 to 8 mins.
  • Step #10 Remove lid, raise heat & cook till 3/4 of water has evaporated.
  • Step #11 Stirring constantly.
  • Step #12 serve this with dal.
