Mashed Garlic Spread Recipe

Ingredients
  • 1 1/2 tb Butter
  • 1/2 ts Ground ginger
  • 2 lb Butternut squash; peeled cut in 1 1/2 " cubes
  • Salt & white pepper

Directions
  • Step #1 1.
  • Step #2 Fit a large soup kettle with a steamer basket; fill kettle with enough water to come to the bottom of the basket.
  • Step #3 Bring water to boil; add squash.
  • Step #4 Cover, & cook over medium-high heat until squash is very tender when pierced with a thin-bladed knife, 14 to 16 mins.
  • Step #5 2.
  • Step #6 Transfer squash to a shallow bowl, add butter, ginger, & salt and pepper to taste; mash with a fork to a coarse puree.
  • Step #7 Adjust Spice uping & serve.
  • Step #8 Can be covered & put in the fridged overnight; reheat in microwave or double boiler.
