Ingredients
1 1/2 tb Butter
1/2 c Sour cream, at room temp
1 ts Vegetable oil
Salt & pepper to taste
1/4 c Butter, softened & cut in
1 Leek, thinly sliced
1/2 c Buttermilk
1 lb Mushrooms, thinly sliced
3 lg Baking potatoes

Directions
Step #1 Boil the potatoes until tender.
Step #2 Heat 1/2 T butter in a skillet and cook the leeks for 5 - 7 mins, until tender & golden.
Step #3 Set aside.
Step #4 In a large skillet, over moderate heat, cook the mushrooms in the remaining tbsp of butter until they begin to render their juices.
Step #5 Turn up the heat & continue cooking until they are almost dry.
Step #6 Spice up this with salt & pepper.
Step #7 Preheat the oven to 350.
Step #8 When the potatoes are tender, peel, drain, & return them to the pot.
Step #9 Toss over low heat/flame to dry, then put them through a ricer into a mixer bowl.
Step #10 Beat in the softened butter, buttermilk, & salt & pepper to taste.
Step #11 Spread half the potatoes on the bottom of a shallow baking dish.
Step #12 Spread the mushrooms over the potatoes & the leeks over the mushrooms.
Step #13 Spread with 1 c of sour cream & cover with the remaining potatoes.
Step #14 Bake, uncovered, for 45 mins to 1 hr or until browned & bubbling.
