Step #1 ---SAUCE------ 1 md Onion, cut into chunks 3 md Tomatoes 1 Piece ginger, sliced ( 1 -inch) 2 Garlic clove 1 sm Red or green chili 2 tb Garam masala (a ground -spice) 1 ts Salt 1 c Water 2 tb Vegetable oil 3 c Fresh or frozen peas Paneer is a fresh cheese with plenty of texture & protein.
Step #2 In this traditional northern Indian dish, Paneer is mixd with gree peas in a spicy tomato-ginger sauce.
Step #3 Fresh Paneer is quite crumbly, so it is generally cut into cubes & sauteed until golden before combining with other ingredients.
Step #4 For variety, try adding some finely minced fresh cilantro & a little freshly ground black pepper to the mixture before cubing & frying.
Step #5 If you do have any left over, serve it warm in whole wheat pita bread topped with sliced tomaotes & crunchy red onions.
Step #6 PANEER: FOR PANEER: Bring milk to a boil.
Step #7 As soon as it begins to bubble, stir in the lemon juice; remove this from heat.
Step #8 Allow to rest 15 mins; the curds will separate from the whey.
Step #9 Strain curds through a triple layer of cheesecloth; squeeze out as much whey as you easily can.
Step #10 Discard whey.
Step #11 Knead flour into curds, place on a plate; pat to 3/4 inch thickness.
Step #12 put in the fridge while preparing sauce.
Step #13 For sauce, place all ingredients except peas in a mixer or food processor/blender; mix to a smooth paste.
Step #14 pour this into a large skillet, uncovered, bring to a boil; simmer, about 20 mins.
Step #15 Meanwhile, remove Paneer from refrigerator, cut into 1 inch cubes.
Step #16 Heat the 2 tbsp oil in a on-stick skillet, saute cubes until golden on both sides.
Step #17 Add paneer cubes & peas to sauce.
Step #18 Simmer for ten mins or until peas are cookes.
