Maurice's Spicy Chicken Wings Recipe

Ingredients
  • 1 c Sour cream
  • 2 c Brown sugar
  • GARNISH:
  • 4 c Icing sugar, sifted
  • 2 1/4 c Cake & pastry flour
  • 1 1/4 c Unsalted butter
  • 1/2 ts Salt
  • ICING:
  • 1/2 c Unsalted butter, at room temperature
  • 2 1/2 Granulated sugar
  • 1 tb Toasted sesame seeds
  • 1 c Boiling water
  • 1 ts Pure vanilla extract
  • 1/2 c Milk
  • 2 1/2 ts Baking powder
  • 3 Eggs, separated
  • 3 oz Unsweetened chocolate
  • 1 c Strawberry jam or preserves
  • 2 tb Cocoa
  • 1 ts Baking soda

Directions
  • Step #1 Preheat the oven to 350?F.
  • Step #2 Butter an 8 or 9 inch round cake pan and line the bottom with parchment paper or waxed paper.
  • Step #3 Butter an 8 or 9 inch round-bottomed Pyrex casserole bowl & line the bottom with paper.
  • Step #4 To make the cake, mix the chocolate & water in the top of a double boiler.
  • Step #5 Heat over carefully simmering water until melted.
  • Step #6 Stir well & cool slightly.
  • Step #7 Add the baking soda.
  • Step #8 Sift together the flour, salt & baking powder & reserve.
  • Step #9 Cream the butter until light.
  • Step #10 slowly beat in 2 c granulated sugar.
  • Step #11 Add the egg yolks, one at a time, & then add the vanilla.
  • Step #12 Add the chocolate mixture to the egg-yolk mixture.
  • Step #13 Add the dry ingredients alternately with the sour cream, mixing just until the ingredients are mixed.
  • Step #14 Beat the egg whites until light an slowly beat in the remaining 1/2 c granulated sugar.
  • Step #15 Fold the whites carefully but thoroughly into the batter.
  • Step #16 Pour the batter into the round cake pan until it is three-quarters full.
  • Step #17 Pour the remaining batter into the Pyrex casserole bowl.
  • Step #18 Bake for 40 to 50 mins, or until the cakes feel firm when carefully pressed at the top.
  • Step #19 Let the cakes cool for 10 mins & then remove from the pans.
  • Step #20 Cool on racks.
  • Step #21 Meanwhile, prepare the icing.
  • Step #22 Melt the butter in a saucepan.
  • Step #23 Add the brown sugar & cook for 2 mins.
  • Step #24 Add the milk & bring to a boil.
  • Step #25 Cool.
  • Step #26 Beat in the sifted icing sugar until the icing is of spreading consistency.
  • Step #27 If it is too runny, add more sugar; if it is too stiff, add 1 tbsp.
  • Step #28 boiling water.
  • Step #29 Remove 1/2 c icing & mix with the cocoa.
  • Step #30 To assemble, slice the cooled cake from the round pan in two horizontally.
  • Step #31 Place one half on the cake plate, Ice the top & sides with the butterscotch icing.
  • Step #32 Place the second half on top & ice with the cocoa frosting.
  • Step #33 Spoon on the jam, allowing it to flow down the sides of the cake like ketchup.
  • Step #34 Place the large casserole-shaped cake on top this with the rounded side up.
  • Step #35 Spread with butterscotch icing.
  • Step #36 Sprinkle top the top this with sesame seeds.
  • Step #37 Yield: One Large Cake.
