Mayan Chili Recipe

Ingredients
  • 1 pn Sugar
  • 1/4 ts Black onion seeds
  • 1 1/2 ts Salt
  • 1/2 ts Turmeric
  • 6 tb Oil
  • 4 ea Garlic cloves, pressed
  • Oil for deep frying
  • 8 md Potatoes
  • 1 ea Onion, coarsely sliced
  • 1/4 ts Black mustard seeds
  • 1 pn Asafetida
  • 7 ea Fenugreek seeds
  • 3 ea Dried red peppers
  • 1/2 ts Fennel seeds
  • 2 md Tomatoes, sliced
  • 1 ea Bay leaf

Directions
  • Step #1 Boil potatoes at least 2 hrs ahead.
  • Step #2 Leave to cool.
  • Step #3 Just before cooking the dish, cube them into bite-sized pieces.
  • Step #4 Heat oil over a medium flame.
  • Step #5 Fry potatoes in small batches till golden brown on all sides.
  • Step #6 Drain & set aside.
  • Step #7 Save some of the oil for later use.
  • Step #8 mix onion & garlic with 3 tb water.
  • Step #9 Heat 6 tb oil in large pot.
  • Step #10 When very hot, add asafetida, onion, fennel, fenugreek, & mustard seeds & bay leaf & red pepper in quick succession.
  • Step #11 Fry 20 seconds till bay leaf darkens.
  • Step #12 Add paste from the mixer & turmeric.
  • Step #13 Fry, stirring for 5 mins.
  • Step #14 Add tomatoes & sugar.
  • Step #15 carefully stir in the 2 c water, salt & potatoes.
  • Step #16 Bring to a boil.
  • Step #17 Cover & simer for 10 mins.
  • Step #18 Turn each potato over & simmer another 10 mins.
  • Step #19 Serve hot.
