Ingredients
  • 1/2 c Cumin seeds
  • 1/2 c Fennel seeds
  • 1/2 c Dried whole red chiles (such
  • 10 Whole cloves
  • 10 Whole cardamom pods
  • 3 1/2 ts Black peppercorns
  • 1 Cinnamon stick; 7-inch
  • 2 1/4 c Coriander seeds
  • 5 ts Turmeric powder

Directions
  • Step #1 Recipe by: Tina Kanagaratnam In a dry pan, peppercorns, fennel, carefully fry, one at a time, the coriander, cumin, & the whole chiles.
  • Step #2 Fry the chiles until they are dark brow & crispy.
  • Step #3 Cool & break the chiles into pieces.
  • Step #4 Place the chiles, alon with the seeds, in a spice or coffee grinder & process to a fine powder.
  • Step #5 mix well.
  • Step #6 Store the powder in airtight containers when it is completely cool.
