Meat Pies Creole Style Recipe

Ingredients
  • 1 sm Turnip; cut into 1" dice
  • 1 md Carrot; cut into 1/2" slices
  • 1 sm Egg; lightly beaten
  • 2 c Chicken stock OR low-sodium chicken broth
  • 1/2 c Frozen peas
  • 1/2 ts -Dried sage
  • 2 tb Flour
  • 1 sm Onion; roughly sliced
  • 2 tb Oil
  • 2 lb Sirloin tips
  • 1 Celery stalk cut into 1-in pieces
  • 1 ts Fresh sage; -=OR=-
  • 1/2 ts Finely minced garlic
  • 1/2 ts Salt
  • 3/4 c Red wine

Directions
  • Step #1 TOSS THE MEAT with the flour & set aside.
  • Step #2 Heat the oil in a skillet over high heat until nearly smoking.
  • Step #3 Add the meat in batches and without crowding, brown well on all sides.
  • Step #4 Remove pieces as they are done & reserve on a plate.
  • Step #5 Discard the cooking fat & reduce heat to low.
  • Step #6 Add onion, celery, turnip & carrot.
  • Step #7 Cover & cook for 10 mins.
  • Step #8 Add the garlic & wine, uncovered, raise the heat & cook, until the wine has reduced to almost nothing.
  • Step #9 Add the stock and continue to cook this until reduced by about 2/3.
  • Step #10 Add the peas to the skillet & replace the meat & any juices that have collected on the plate.
  • Step #11 Add the salt & sage.
  • Step #12 place this in refrigerator to chill for 30 mins.
  • Step #13 Preheat the oven to 375F.
  • Step #14 Line a 9-inch pie dish with your pastry & pour in the meat, vegetable & sauce.
  • Step #15 Cover the top of the pie with the rest of your pastry.
  • Step #16 Poke a few holes in the top to allow steam to escape during baking.
  • Step #17 Brush lightly with egg.
  • Step #18 Place in oven & bake for 30 mins.
  • Step #19 Serve as soon as possible.
