Ingredients
  • 1 ts Ginger,ground
  • 1 ts Salt
  • 3/4 c Cream
  • 2 oz Sugar
  • 7 Egg Yolks
  • 1 tb Cold Water
  • 1 pn Saffron mixed into
  • 9 oz Dates,sliced
  • 2 tb Parsley,sliced
  • 13 oz Flour
  • 3 1/3 lb Pork Shoulder
  • 1 tb Water
  • 1 Egg
  • 1/4 oz Salt
  • 1 ts Nutmeg
  • 6 oz Butter
  • 2 oz Pistachios, sliced
  • 1 ts Sage
  • 9 oz Raisins

Directions
  • Step #1 1.
  • Step #2 For the dough mix flour, salt & cut the butter in ;with fingertips mix until the dough is crumbly.
  • Step #3 Put egg into the middle.
  • Step #4 Add water & mix to a dough;add more water if needed.
  • Step #5 Knead for a little bit only.
  • Step #6 Wrap into ceranwrap & keep in refridgerator for 1 hr before rolling out.

  • Step #8 For the filling ;cover the pork with water & let simmer 1 1/2 hrs until it is soft.
  • Step #9 Cut into small cubes.
  • Step #10 Pour 1 1/4 of the broth through a stainer & mix the sage with the water & add parsley & add to pot.
  • Step #11 & bring to a boil.
  • Step #12 Add the meat, dates, raisins & pistachios to mix.
  • Step #13 3.
  • Step #14 Take off the stove & mix the sugar, salt, eggyolks, cream & the rest of the ingridients with a wirewisk together.
  • Step #15 Mix into meatmix.
  • Step #16 4.
  • Step #17 Roll out the dough & line two cakepans with it(line with waxpaper and fill with dry beans to prevent bubbles).
  • Step #18 5.
  • Step #19 In preheated 190 C oven bake the dough about 10 mins, untill it is firm but still pale.
  • Step #20 5.
  • Step #21 Add the meatmix into pans & bake another 40 min.
  • Step #22 at 190 C.
  • Step #23 6.
  • Step #24 The finished meatcakes need to stand 5 mins before serving.
