Medallions Of Pork With Riesling Sauce * Recipe

Ingredients
  • 1 Whole clove
  • 2 ts Honey
  • Pork, 3 oz each,
  • 1 tb Freshly grated ginger
  • 1 ts Balsamic vinegar
  • Salt & pepper to taste
  • 1/2 ts Dried thyme OR
  • 1/2 c Red wine
  • 1 tb Olive oil
  • Trimmed of fat
  • 1 Bay leaf
  • 8 Slices boneless loin of
  • 2 tb Butter
  • 2 Sprigs of fresh
  • 2 tb Finely sliced shallots

Directions
  • Step #1 Place pork slices on a flat surface.
  • Step #2 lb lightly with a mallet.
  • Step #3 Sprinkle top with salt & pepper.
  • Step #4 mix ginger, vinegar, thyme, wine, bay leaf, clove, & honey in a bowl & mix well.
  • Step #5 Place sliced pork in a dish & pour mixture over it.
  • Step #6 Marinate for 10 mins.
  • Step #7 Drain the pork medallions & pat dry.
  • Step #8 Reserve marinate.
  • Step #9 Place meat in a single layer in skillet in the hot oil.
  • Step #10 --.
  • Step #11 Cook for 5 mins, turn & cook for 5 mins more over medium high heat.
  • Step #12 Reduce heat & cook meat for 2 mins more.
  • Step #13 Transfer meat to a dish & keep warm.
  • Step #14 In skillet add the shallots & cook stirring until wilted.
  • Step #15 Add the reserved marinate & cook, stirring & scraping the botton.
  • Step #16 cook this until marinate is reduced to 3/4 its original amount.
  • Step #17 Swirl in the butter & pour the sauce over the medallions.
  • Step #18 Remove bay leaf & sprigs of thyme before serving.
