Mediterranean Lasagne Recipe

Ingredients
  • 8 oz Lasagna noodles, eggless; uncooked

Directions
  • Step #1 ---SAUCE------ 1 lb Kidney beans, canned; rinsed -and drained 16 oz Tomato sauce, canned; sliced, -undrained 1 ts Basil 1/4 ts Garlic powder--FILLING----- 1 tb Olive oil or veg stock 2 Garlic cloves; finely -sliced 2 c Eggplant; peeled, canned; salt- -free or regular 1 lb Tomatoes, cut into -1/4" pieces 1 c Onions; sliced 1 ts Basil 1 c Tofu ricotta To prepare sauce: Place kidney beans in a large bowl.
  • Step #2 Mash with a fork or potato masher.
  • Step #3 add in the remaining sauce ingredients & mix well.
  • Step #4 Set aside.
  • Step #5 To prepare filling: Heat oil or vegetable stock in a large nonstick skillet over medium heat.
  • Step #6 Add garlic, onions, eggplant, & basil.
  • Step #7 Cook, stirring frequently, 10 mins.
  • Step #8 remove this from heat & let cool for 10 mins.
  • Step #9 Spoon into a large bowl & add tofu ricotta.
  • Step #10 Mix well.
  • Step #11 Cook lasagna noodles, according topackage directions.
  • Step #12 Drain.
  • Step #13 Place noodles, in a single layer, on a sheet of waxed paper.
  • Step #14 (This will keep them from sticking together.
  • Step #15 ) preheat your trusty oven to 375 deg.
  • Step #16 Lightly oil a 7 x 11-inch baking pan or spray with a nonstick cooking spray.
