Mediterranean Meatballs Recipe

Ingredients
  • 2 Garlic cloves; minced
  • 9 Pieces Lasagne; uncooked
  • 4 oz Feta cheese, crumbled
  • 1 tb Vegetable oil
  • 3 c Part-skim ricotta cheese
  • 28 oz Tomato sauce
  • 1 lb Eggplant - peeled & finely sliced
  • 1 lg Onion; finely sliced
  • 1/2 c Grated Parmesan cheese
  • 1 c Plain, low-fat yogurt

Directions
  • Step #1 Cook lasagne according to package directions; drain.
  • Step #2 preheat your trusty oven to 350 degrees F.
  • Step #3 Warm oil in a large saucepan over low heat.
  • Step #4 Add onion, garlic & eggplant.
  • Step #5 Cover & let vegetables cook until very soft, about 10 mins.
  • Step #6 Meanwhile, stir this together the ricotta, feta & yogurt.
  • Step #7 When vegetables are done, stir in the tomato sauce.
  • Step #8 remove this from heat & set aside 1 c of eggplant mixture.
  • Step #9 In a 9 x 13 x 2-inch baking dish, spread a little of the eggplant mixture over the bottom & cover with 3 pieces of lasagne.
  • Step #10 Spoon some of the ricotta over the lasagne.
  • Step #11 Continue to layer with eggplant mixture, lasagne, & ricotta.
  • Step #12 Place a layer of lasagne on top.
  • Step #13 Spread the reserved eggplant over lasagne & Sprinkle top with Parmesan.
  • Step #14 Bake uncovered for 45 mins, until cheese is brown.
  • Step #15 Serves 10 to 12 Each serving contains: 266 Calories; 15.
