2 c French or Italian bread; preferably day old cut in 2 inch cubes
1 c English cucumber in 1/2 inch cubes
2 md Tomatoes; cut in 1/2 " cubes
Directions
Step #1 --DRESSING----- 2 tb Lemon juice 3/4 ts -Salt 1 lg Garlic cloves;finely sliced 1/2 ts -pepper, ground 1 ts Cinnamon, black, ground 9 tb Olive oil; extra virgin ""NOTE: After a couple of hrs, ground 1/4 ts Allspice, the croutons will start to absorb the dressing.
Step #2 Some people like this; others (including the reviewer for Toronto Life!) do not.
Step #3 Time the addition of the croutons to suit your taste.
Step #4 " preheat your trusty oven to 350F.
Step #5 Spread the bread cubes on a large baking sheet & toss with the oil.
Step #6 Bake in the preheated oven until golden brown, turning them every few mins.
Step #7 They will take 10 to 20 mins, depending on how fresh the bread is.
Step #8 Assemble the cucumber, peppers, green onion & parsley in a large bowl; leave out the tomatoes for now.
Step #9 Prepare the dressing: Stir the lemon juice, salt & garlic together until the salt dissolves.
Step #10 Add the pepper, cinnamon & allspice, then slowly beat in the olive oil.
Step #11 (May be prepared up to 12 hrs ahead to this point.
Step #12 ) Place the cut up tomatoes on top of the other vegetables.
Step #13 Pour on the dressing and toss well; add the croutons & toss again (see note).
