Mediterranean Summer Salad Recipe

Ingredients
  • 1 tb Lemon juice
  • 6 oz Tomatoes, skinned, seeded & - finely sliced
  • 1 ea Sprig of parsley
  • 8 oz Button mushrooms, wiped
  • 1 ea Garlic clove, crushed
  • 1/4 pt Water
  • 1/4 ts Salt
  • 1 tb Parsley, sliced
  • Pepper, to taste
  • 2 tb Olive oil
  • 1 ea Bay leaf
  • 1 oz Celery, cut in half

Directions
  • Step #1 Place tomatoes, parsley sprig, water, bayleaf, celery, lemon juice, garlic, oil, salt & pepper in a pan.
  • Step #2 Bring to a boil & simmer, uncovered, for 5 mins.
  • Step #3 Add the mushrooms & simmer, uncovered, for a further 5 mins.
  • Step #4 Remove the celery, parsley & bay leaf.
  • Step #5 Using a slotted spoon, divide the mushrooms between 4 small plates.
  • Step #6 Boil the liquid rapidly until it has been reduced by half, about 5 mins.
  • Step #7 Spoon over the mushrooms & Sprinkle top with parsley.
