Medium Bulgur Or Cracked Wheat (vegan) Recipe

Ingredients
  • Cut into small chunks
  • Juice from 1/2 lemon
  • 1 tb Dried rosemary
  • & sliced
  • 12 To 14 black olives, pitted
  • 4 sm Potatoes, peeled & cut
  • 1 lg Onion, sliced
  • 3 Carrots, peeled & cut into
  • 3 tb Olive oil
  • 1/2 inch rounds
  • 1/2 c sliced parsley
  • Into small cubes
  • 2 Cloves garlic, sliced
  • 1 lb Boneless chicken breasts,
  • 1 tb Dried basil

Directions
  • Step #1 In small pot, cover potatoes with water & boil about 5 mins, until tender.
  • Step #2 Drain into colander.
  • Step #3 In a 2 1/2 to 3 quart pot, over medium heat, heat olive oil.
  • Step #4 Add onion & garlic; saute about 5 mins, until translucent.
  • Step #5 Add chicken & saute' approximately 5 mins, until chicken is opaque.
  • Step #6 Add 1 1/2 c water, rosemary, basil, lemon juice, carrots, parsley & olives.
  • Step #7 Simmer on stovetop about 25 mins, untill chicken is cooked through.
