Ingredients
1 tbsp vegetable oil
1/4 tsp salt
2 tbsps white sugar
1/2 c warm water
1 1/2 c all-purpose flour
1 tbsp active dry yeast
1/4 c all-purpose flour
1/2 tsp baking powder
1 tsp white sugar
1/4 c water
Directions
Step #1 Mix together yeast, 1/4 c flour, 1 tsp sugar, & 1/4 c warm water.
Step #2 Allow to stand for 30 mins.
Step #3 Mix in 1/2 c warm water, 2 tbsps sugar, flour, salt, & vegetable oil.
Step #4 Knead until dough surface is smooth & elastic.
Step #5 Roll over in a greased bowl, & let this stand until triple in size, about 2 1/2 to 3 hrs.
Step #6 Punch down dough, & spread out on a floured board.
Step #7 Sprinkle top baking powder evenly on surface, & knead for 5 mins.
Step #8 Divide dough into 2 parts, & place the piece you are not working with in a covered bowl.
Step #9 Divide each half into 12 parts.
Step #10 Shape each part into a ball with smooth surface up.
Step #11 Put each ball on a wax paper square.
Step #12 Let stand covered until double, about 30 mins.
Step #13 Bring water to a boil in wok, & reduce heat to medium; the water should still be boiling.
Step #14 Place steam-plate on a small wire rack in the middle of the wok.
Step #15 Transfer as many buns on wax paper as will comfortably fit onto steam-plate leaving 1 to 2 inches between the buns.
Step #16 At least 2 inches space should be left between steam-plate & the wok.
Step #17 Cover wok with lid.
Step #18 Steam buns over boiling water for 15 mins.
Step #19 REMOVE LID BEFORE you turn off heat, or else water will drip back onto bun surface & produce yellowish "blisters" on bun surfaces.
Step #20 Continue steaming batches of buns until all are cooked.
