Chicken Afritada Recipe

Ingredients
  • 1 (10 oz) can tomato sauce
  • 1 onion, sliced
  • 1 (10 oz) can baby peas, drained
  • 4 medium potatoes, peeled & cubed
  • 1/2 c vegetable oil
  • 1 red bell pepper, cut into strips
  • 1/2 c soy sauce
  • 1 tbsp sliced fresh ginger
  • 2 tsps garlic salt
  • 1/2 c oyster sauce
  • 1 pinch ground black pepper
  • 1 whole chicken, cut into pieces

Directions
  • Step #1 Heat oil in a large skillet over medium-high heat.
  • Step #2 Cook onion & ginger for 3 mins, browning slightly.
  • Step #3 Lay chicken in the skillet, skin side down.
  • Step #4 Fry until golden, about 10 mins, turning once with tongs.
  • Step #5 In a bowl, whisk together tomato sauce, oyster sauce, & garlic salt, soy sauce, & pour evenly over chicken.
  • Step #6 Gently fold in peas, bell pepper, & potato.
  • Step #7 Simmer 20 to 30 mins, or until chicken is cooked through & no longer pink in the center.
  • Step #8 Spice up with ground black pepper.
