Merritt Apple Fritters Recipe

Ingredients
  • 7 lb Pork Crown Roast
  • 1/4 ts Pepper
  • 1/2 ts Salt

Directions
  • Step #1 Heat oven to 325F degrees F.
  • Step #2 Spice up meat with salt & pepper.
  • Step #3 Place roast in lrg.
  • Step #4 roasting pan, rib bones up.
  • Step #5 Cover rib bones with foil to prevent excess browning.
  • Step #6 Insert meat thermometer so bulb reasher center of raost not touching fat or bone.
  • Step #7 Roast at 325F degrees F.
  • Step #8 for 2 hrs.
  • Step #9 Prepare Savory Rice Stuffing (recipe to follow).
  • Step #10 Fill center of roast with stuffing; continue roasting 1 1/2-2 hrs.
  • Step #11 longer until meat is well done & thermometer register 170 degrees to 180 degrees F.
  • Step #12 Remove foil from rib tips.
  • Step #13 Place roast on serving plate or carving board.
  • Step #14 Garnish with Lady Apple Fruit Wreath (see previous recipe).
  • Step #15 TIP: For ease in carving, insert fork in top of roast; make slices by cutting close along sides of rib bones.
