Mersey Point Marinated Herring Salad Recipe

Ingredients
  • 1 c Soft bread crumbs
  • ds Cayenne pepper
  • 3 c Lobster, crab, shrimp, Sea legs -- cut up
  • 2 Eggs -- slightly beaten
  • 1 c Buttered cracker crumbs --
  • 2 tb Butter
  • 2 c Light cream
  • 1 tb Lemon juice
  • Saltines may be used
  • 1 ts Prepared mustard
  • 1/4 ts Fresh ground black pepper
  • Salt -- to taste

Directions
  • Step #1 Lobster may be frozen, canned, or fresh.
  • Step #2 Sprinkle top lemon juice and beaten eggs over lobster.
  • Step #3 Bring cream, butter, & bread crumbs just to a boil; stir well together & pour over lobster.
  • Step #4 Stir mustard, cayenne pepper, black pepper, & salt carefully into lobster mixture.
  • Step #5 pour this into a buttered casserole dish & top this with 1 c buttered cracker crumbs.
  • Step #6 Bake, uncovered, in a preheated oven at 350^ until crumbs are brown & lobster is bubbly - no more.
