Mersey Point Smoked Mackerel Log Recipe

Ingredients
  • 3 tb Butter or margarine
  • Pepper
  • 1 tb Capers
  • 1 1/3 c Fish or chicken stock
  • 1/4 lb Salmon bits
  • Lemon juice
  • 1 tb Milk or cream
  • 1 ts Dill
  • 3 tb Flour

Directions
  • Step #1 Melt butter, stir in the flour & mix.
  • Step #2 Slowly add the stock & milk.
  • Step #3 When sauce is smooth & boiling, add the salmon bits, dill, and capers.
  • Step #4 Add pepper & lemon to taste.
  • Step #5 This sauce is great served over rice, fettucini, or pastry.
  • Step #6 Serve it as a hors d'oeuvre, appetizer, or main course.
