Mersey Point Solomon Gundy Recipe

Ingredients
  • 1 tb Celery; finely sliced
  • 2 Smoked mackerel fillets
  • 1 ts Onion; finely sliced
  • 1 ts Horseradish
  • 1 c Almonds; crushed
  • 8 oz Light cream cheese
  • Salt
  • 1/4 c Parsley; fresh,fine sliced
  • Pepper
  • 2 ts Lemon juice

Directions
  • Step #1 Remove skin & bones from smoked mackerel.
  • Step #2 Mix & mix smoked mackerel, celery, cream cheese, lemon juice, onion, & horseradish.
  • Step #3 Add salt & pepper to taste.
  • Step #4 Spread mixture on plastic wrap & form into a log.
  • Step #5 put in the fridge until firm.
  • Step #6 mix almonds & parsley.
  • Step #7 Roll log in this mixture.
  • Step #8 serve this with crackers.
