Bay Scallop Stew Recipe

Ingredients
  • 1/4 c Red onion, finely sliced
  • 2 lb Bay scallops
  • 1 c Fresh lime juice
  • 1 Hot red chili pepper
  • 3 Scallions; sliced
  • 1 Lime; sliced, for garnish
  • 3 Ripe plum tomatoes
  • 1 1/2 ts Ground cumin
  • 1/2 c Fresh orange juice
  • 1 Red pepper; seeded & sliced
  • 1 c Cilantro, sliced

Directions
  • Step #1 Note: Hot red chili pepper should be finely sliced.
  • Step #2 Plum tomatoes should be seeded & sliced.
  • Step #3 Stir the cumin into the lime & orange juices & pour over the scallops.
  • Step #4 stir in the the sliced chili pepper & red onion.
  • Step #5 Cover and put in the fridge for at least 2 hrs.
  • Step #6 Just before serving, sweet pepper, drain the scallops & mix with the sliced tomatoes, scallions & cilantro.
  • Step #7 Garnish with the slices of lime.
