Bayswater Brasserie Seared Sea Scallops In Li Recipe

Ingredients
  • 1/3 c Onion; sliced
  • 1 x Pepper; As Desired
  • 4 c Potatoes;
  • 1/2 ts Salt
  • 2 c Chicken Broth;
  • 1/4 c Vegetable Oil
  • 2 tb Lemon Juice
  • 1/2 ts Sugar

Directions
  • Step #1 Potatoes should be peeled & sliced 1/4-inch thick.
  • Step #2 Chicken broth may be either home made or commercial.
  • Step #3 +++ Boil potatoes in broth with 1/4 t salt for 5 to 8 mins, until tender.
  • Step #4 Drain.
  • Step #5 Toss warm potatoes with vegetable oil & onions.
  • Step #6 Dissolve remaining 1/4 t salt & the sugar in lemon juice.
  • Step #7 Pour over potatoes.
  • Step #8 Marinate salad 1 to 2 hrs before serving.
  • Step #9 Serve at about room temp.
