Ingredients
1/3 c Onion; sliced
1 x Pepper; As Desired
4 c Potatoes;
1/2 ts Salt
2 c Chicken Broth;
1/4 c Vegetable Oil
2 tb Lemon Juice
1/2 ts Sugar
Directions
Step #1 Potatoes should be peeled & sliced 1/4-inch thick.
Step #2 Chicken broth may be either home made or commercial.
Step #3 +++ Boil potatoes in broth with 1/4 t salt for 5 to 8 mins, until tender.
Step #4 Drain.
Step #5 Toss warm potatoes with vegetable oil & onions.
Step #6 Dissolve remaining 1/4 t salt & the sugar in lemon juice.
Step #7 Pour over potatoes.
Step #8 Marinate salad 1 to 2 hrs before serving.
Step #9 Serve at about room temp.
Step #10 --.
