Bbq Sauce Adapted From Whole Chile Pepper Boo Recipe

Ingredients
  • 1 lg Onion, minced
  • 6 Dried red New Mexican chiles, stemmed, seeded crushed
  • 2 ts Paprika and
  • 4 tb Brown sugar
  • 5 tb White vinegar
  • 1/2 ts Cumin, and
  • 4 Dried tepins, pequins, or cayennes, stemmed and crushed
  • 1 tb Pickle relish, optional
  • 8 oz Catsup
  • 2 Garlic, sliced
  • 2 ts Wright's hickory smoke Spice uping
  • 2 ts Worcestershire
  • 1 tb Chili powder OR
  • 4 oz Canned tomato sauce
  • 1/2 ts Garlic powder
  • 2 ts Dry mustard
  • 2 tb Bacon fat or veg. oil

Directions
  • Step #1 Cover the chiles with hot water & let soften for 15 min.
  • Step #2 Put them in a mixer & whirl until smooth with 1 c of the hot water.
  • Step #3 In a saucepan, saute the onion & garlic in the fat.
  • Step #4 Add the mixed chiles & all the rest of the ingredients.
  • Step #5 Bring to a boil & lower the heat to low.
  • Step #6 Simmer 1/2 hr.
  • Step #7 Cool & then whirl in a mixer until smooth.
