Bean & Cornmeal Pie (ovo Lacto) Recipe

Ingredients
  • 2 oz Shredded reduced fat cheddar cheese
  • 8 sl Deli chicken breast
  • 4 Flour tortillas 7-8"
  • 1/4 c Salsa
  • 1 c Shredded lettuce
  • 1 c Fat free refried beans

Directions
  • Step #1 Heat oven to 400.
  • Step #2 Spread 1/4 c refried beans evenly onto each tortilla.
  • Step #3 Place 2 slices chicken & 2 tbsps cheese down the center 1/3 of each tortilla; fold sides over filling.
  • Step #4 Place, folded side down, on an ungreased cookie sheet.
  • Step #5 bake this at 400F 6-8 mins or until throoughly heated.
  • Step #6 Serve topped with lettuce & salsa.
