Bean & Tuna Salad Recipe

Ingredients
  • 1/2 c sliced onion
  • 5 c Water
  • 1/2 ts Salt
  • 1/4 ts Ground cumin
  • 8 3/4 oz Canned garbanzo beans - drained
  • 1 Bay leaf
  • 8 oz Hot sausage - sliced 1/2 inch thick
  • 1/8 ts Pepper
  • 8 3/4 oz Canned cream-style corn
  • 1 ts Chicken bouillon granules
  • sliced parsley
  • 1/2 lb Dry small white beans - - soaked

Directions
  • Step #1 Drain & rinse soaked beans.
  • Step #2 Saute onion & garlic in oil until tender.
  • Step #3 Add water, onion & Spice upings.
  • Step #4 Simmer, covered, about 30 mins or until beans are almost tender.
  • Step #5 Add sausage, garbanzo beans & corn.
  • Step #6 Return mixture to boil; simmer 30 mins or until beans are tender.
  • Step #7 Remove bay leaf.
  • Step #8 Garnish with parsley.
  • Step #9 Makes 4 or 5 servings.
