Ingredients
  • 1 1/2 c All-purpose flour
  • 2/3 c 2% milk
  • 1 c Cooked kidney beans wt / red
  • 1/2 ts Salt
  • 1/3 c Butter or soft margarine
  • 1/2 c Whole wheat flour
  • 1 tb Granulated sugar
  • 4 ts Baking powder

Directions
  • Step #1 Revised after testing Feb 94.
  • Step #2 Used 1 1/2 c flour NOT 2 1/2 c as printed in the book.
  • Step #3 The 1 c beans probably replaced 1 c flour in the original recipe.
  • Step #4 Stir dry ingredients together in a mixing bowl.
  • Step #5 Cut in butter until mixture resembles crumbs.
  • Step #6 In food processor/blender or mixer, puree beans with milk.
  • Step #7 OR mash beans & stir in the milk.
  • Step #8 stir in theto dry ingredients all at once to make light soft dough.
  • Step #9 Turn out onto lightly floured board, Sprinkle top with flour & knead about 20 seconds.
  • Step #10 Shape biscuits by rolling, patting & cutting or divide dough into 16 pieces & shape by hand.
  • Step #11 bake this at 400F F for 12 to 15 mins or until golden brown.
  • Step #12 1 biscuit - 162 calories, 1 fats & oils exchange 4 grams total fat, 1 1/2 starch,.
  • Step #13 8 grams saturated fat, 169 mg sodium, 26 grams carbohydrate, 0 cholesterol, 5 grams protein, 204 mg potassium.
