Bean Soup With Carrot Salsa Recipe

Ingredients
  • 1 Celery stalk, sliced
  • 6 c Water
  • 2 tb Tomatoe paste
  • 2 Slices salt pork
  • 3 c Canned beef broth
  • 2 Slices prosciutto rind OR
  • 6 tb Olive oil
  • extra Parmesan cheese
  • 1 Carrot, sliced
  • 1 Medium onion, sliced
  • 1/4 lb Arborio rice
  • 1/3 c Parmesan cheese,fresh grated
  • 2 Garlic cloves, sliced
  • Salt & pepper, to taste
  • 1 tb All-purpose flour
  • 1/4 lb Small elbow macaroni OR
  • 1 ts Dried rosemary
  • 4 c Beef stock OR
  • 2 c Dried pinto beans
  • 2 tb Parsley, sliced
  • 1 Sprig fresh rosemary OR

Directions
  • Step #1 Place beans in a large bowl.
  • Step #2 Add enough cold water to cover & let stand overnight.
  • Step #3 Drain & rinse beans thoroughly.
  • Step #4 Prepare meat broth.
  • Step #5 Place beans in a large saucepan.
  • Step #6 Add water, carrot, prosciutto rind or salt pork, broth, 2 tbsps oil, celery and onion.
  • Step #7 Cover & bring to a boil.
  • Step #8 Reduce heat.
  • Step #9 Simmer 50 to 60 mins, stirring every once in awhile.
  • Step #10 Heat 3 tbsps oil in a small saucepan.
  • Step #11 Add rosemary.
  • Step #12 Cook over med-heat/flame until lightly browned.
  • Step #13 Discard rosemary.
  • Step #14 Add parsley & garlic; saute.
  • Step #15 When garlic changes color, stir in the flour.
  • Step #16 Cook & stir about 1 min.
  • Step #17 Remove 1 c cooking liquid from bean mixture.
  • Step #18 stir in the tomato paste.
  • Step #19 stir in theto flour mixture.
  • Step #20 Spice up this with salt & pepper.
  • Step #21 Cook 5 to 10 mins, stirring frequently.
  • Step #22 Add to bean mixture.
  • Step #23 With a slotted spoon, place a third of bean mixture in a mixer or food processor/blender.
  • Step #24 Process until smooth.
  • Step #25 Return to saucepan.
  • Step #26 Bring soup to a boil.
  • Step #27 Add pasta or rice & cook over high heat 8 to 10 mins.
  • Step #28 Stir several times during cooking.
  • Step #29 Taste & adjust for Spice uping.
  • Step #30 Stir 1 tbsp oil and 1/3 c Parmesan cheese into soup.
  • Step #31 Serve hot with extra Parmesan cheese.
