Bean Thread Noodles With Pork Recipe

Ingredients
  • 1/8 ts Salt
  • 1 c Whole-kernel corn
  • 1 c Dried kidney beans; cooked
  • 2 tb Onion, sliced
  • 1/3 c Yellow cornmeal
  • 1 ts Oil
  • 3/4 c Water
  • 2 tb Green pepper, sliced
  • 1/2 c Tomato puree
  • 1/4 ts Chili powder
  • 1/16 ts Salt
  • 1 1/2 ts Chili powder

Directions
  • Step #1 2 servings of about 1 c filling & 1/3 c cornmeal mush each 296 calories per serving 1.
  • Step #2 Cook green pepper & onion in off in small (8-inch) frypan until tender.
  • Step #3 2.
  • Step #4 stir in the beans, corn, 1-1/2 tsps chili powder, tomato puree, & 1/8 tsp salt.
  • Step #5 3.
  • Step #6 Cover & cook over low heat/flame until flavors are mixed--about 15 mins.
  • Step #7 4.
  • Step #8 Mix cornmeal, water, & 1/16 tsp salt.
  • Step #9 5.
  • Step #10 Cook over low heat/flame, stirring constantly, until very thick-about 3 mins.
  • Step #11 6.
  • Step #12 Spread cornmeal mush over bean mixture to form a crust.
  • Step #13 7.
  • Step #14 Sprinkle top 1/4 tsp chili powder over top of crust.
  • Step #15 8.
  • Step #16 Cook over low heat/flame, with lid ajar, until topping is set--about 7 mins.
  • Step #17 NOTE: 1 c canned kidney beans, drained, may be used in place of cooked dried kidney beans; then omit the 1/8 tsp salt in step 2.
  • Step #18 About 270 calories per serving.
