Coconut Fingers Recipe

Ingredients
  • 1/4 tsp almond extract
  • 1/2 c white sugar
  • 1 c sifted all-purpose flour
  • 1 tsp baking powder
  • 1/4 c sliced almonds
  • 1/4 tsp salt
  • 1/4 tsp vanilla extract
  • 1/2 c butter, softened
  • 1 egg
  • 1 c confectioners' sugar
  • 1/4 c shredded coconut

Directions
  • Step #1 Cream the butter & sugar.
  • Step #2 Beat in the egg, vanilla & almond extracts.
  • Step #3 Sift together the flour, baking powder & salt.
  • Step #4 Mix until well mixed.
  • Step #5 Fold in the almonds & coconut.
  • Step #6 Cover dough & put in the fridge for at least one hr.
  • Step #7 Preheat oven to 375 degrees F (190 degrees C), & grease cookie sheets.
  • Step #8 Roll dough into 1/2 inch rolls & cut into 1 1/2 inch lengths.
  • Step #9 Bake 18 to 20 mins, or until golden.
  • Step #10 Dip in confectioners' sugar & let cool.
