Beef & Pasta Primavera (1993 National Beef Recipe

Ingredients
  • 2 c Uncooked farfalle
  • 2 c Thinly sliced zucchini -
  • 1 cn Ready-to-serve beef broth
  • 3/4 c Grated parmesan cheese - divided
  • 1 1/2 lb Ground beef
  • 15 1/2 oz Canned sliced tomatoes

Directions
  • Step #1 Preparation time: 30 mins 1.
  • Step #2 In large skillet, brown ground beef over medium-high heat 6 to 8 mins or until beef is no longer pink, breaking up into 3/4" pieces.
  • Step #3 Remove beef with slotted spoon; pour off drippings.
  • Step #4 2.
  • Step #5 In same skillet, tomatoes & pasta, add broth, pushing pasta into liquid.
  • Step #6 Bring to a boil, reduce heat to medium.
  • Step #7 Cook, uncovered 15 mins stirring frequently.
  • Step #8 Add zucchini; continue cooking 5 mins or until pasta is tender.
  • Step #9 3.
  • Step #10 Return beef to skillet & stir in the 1/2 c cheese; heat through.
  • Step #11 Sprinkle top with remaining cheese.
