Beef & Pasta Primavera (1993 National Beef Co Recipe

Ingredients
  • Mixture, defrosted
  • 1/2 c Ready to serve broth
  • Pasta
  • 1/4 c Lightly packed fresh basil
  • 1/4 ts Crushed red pepper
  • 1/4 ts Salt
  • 2 Cloves garlic, crushed
  • Cheese
  • 2 1/2 c frozen vegetable
  • 8 oz Uncooked bowtie or rotini
  • Leaves, thinly sliced
  • 1 1/2 c Cherry tomatoes, cut in half
  • 1/4 c Freshly grated Parmesan
  • Steak, cut 1 inch thick
  • 1 tb Olive oil
  • 1 lb Boneless beef top sirloin

Directions
  • Step #1 1.
  • Step #2 Cook pasta according to package directions.
  • Step #3 Keep warm.
  • Step #4 2.
  • Step #5 Meanwhile trim fat from beef steak.
  • Step #6 Cut steak lenghwise in half & then crosswise into 1/8-inch thick strips.
  • Step #7 In large nonstick skillet, heat oil over medium-high heat until hot.
  • Step #8 Add beef and garlic (1/2 at a time) & stir-fry 1 to 2 mins or until outside surface is no longer pink.
  • Step #9 (Do not overcook.
  • Step #10 ) Spice up with salt.
  • Step #11 Remove to large bowl; keep warm.

  • Step #13 In same skillet, mix vegetable mixture, beef broth & red pepper; cook 3 to 4 mins or until vegetables are crisp-tender.
  • Step #14 Add vegetable mixture, pasta, tomatoes & basil to beef; toss to mix.
  • Step #15 Sprinkle top with cheese; serve as soon as possible.
  • Step #16 Total preparation & cooking time: 30 mins.
