Beef & Tequila Stew Recipe

Ingredients
  • 1 1/2 lb Beef
  • 3 Cloves garlic
  • 1 Bottle of stout
  • 1 Bouquet garni
  • Salt & pepper
  • 1 lb Shallots or small onions
  • 1 tb Wine or cider vinegar
  • Basil & parsley
  • 6 oz Lean bacon, cubed
  • 2 tb Flour
  • 1 tb Butter
  • 1 tb Sugar

Directions
  • Step #1 Saute the beef & bacon in a little oil.
  • Step #2 Drain off the excess liquid.
  • Step #3 Remove the meat anmd set aside.
  • Step #4 Add the butter to the pan, & melt.
  • Step #5 stir in the the flour to make a roux.
  • Step #6 slowly stir in the the stout.
  • Step #7 Place the meat & the small onions (peeled) in a deep casserole dish, & Spice up this with the salt, pepper & herbs.
  • Step #8 Crush the garlic & add to the ingredients.
  • Step #9 Sprinkle top the sugar on top, and pour in the sauce.
  • Step #10 Cover & place this in the oven.
  • Step #11 Cook very carefully for up to 3 hrs at 300F.
  • Step #12 Check every once in awhile.
  • Step #13 If the casserole seems to be drying a little, you can add more stout.
  • Step #14 remove this from the oven and mix in the vinegar.
  • Step #15 serve this with lots of boiled potatoes to sop up the sauce.
