Step #1 Preparing Tomatoes: Remove skins off tomatoes by placing tomatoes in hot boiling water.
Step #2 Leave for 2 to 3 mins, peel off tomatoe skins, cut tomatoes in 6 wedges & place this in bowl.
Step #3 Heat wok, add 2 tbsps vegetable oil, add 1/2 of the ginger and garlic, add raw beef & cook it to 50 percent done (optimist) or 50 percent raw (pessimist).
Step #4 Remove beef from wok.
Step #5 Add 2 more tbsps of vegetable oil to wok, add onions, add in the remaining garlic & ginger, cook 1 min & add tomatoes.
Step #6 Stir fry until tomatoes are warm, add water, salt, sugar & ketchup.
Step #7 Spice up sauce to your taste.
Step #8 Bring to a boil & thicken sauce with corn starch.
Step #9 Add back the cooked beef & shredded green onions.
Step #10 Mix well & remove this from wok.
Step #11 Serve over steamed rice, chow mein, or fried rice.
