Beef Bourguignon - Bon Appetit Recipe

Ingredients
  • 1/2 c Butter
  • 2 1/2 c Red wine
  • 1 cn Beef stock
  • 1 1/2 c Brandy
  • 1 tb Tomato paste
  • 1/2 ts Thyme
  • 1/4 c Flour
  • 1 ea Bay leaf
  • 2 ea Garlic cloves, sliced
  • 1/2 lb Pearl onion
  • 1/2 lb Mushrooms, whole
  • 3 lb Stew beef, cubed

Directions
  • Step #1 Marinate beef in 1/3 of brandy & red wine for at least 1 hr.
  • Step #2 Turn every once in awhile.
  • Step #3 In large heavy skillet heat half the butter until foamy.
  • Step #4 Mix together flour with salt & pepper to taste.
  • Step #5 Roll beef cubes in flour, place this in hot butter & brown, removing cubes as they are done.
  • Step #6 In separate skillet, heat remaining butter; add onions; stir, cover & let simmer over low heat/flame 2 min.
  • Step #7 Add mushrooms, turn up heat & saute' 3 mins.
  • Step #8 remove this from heat; add tomato paste,garlic & 1 tbl flour.
  • Step #9 Mix until smooth.
  • Step #10 add in the remaining brandy, red wine, bay leaf, thyme, beef stock, salt + pepper to taste.
  • Step #11 Boil, reduce heat.
  • Step #12 Simmer 15 min.
  • Step #13 Add beef & let simmer 1 1/2 hrs.
