Ingredients
  • Lettuce leaves
  • Scallion mayo, bernaise Hollandaise sauce
  • Vegetable oil for frying
  • Tomato sauce,green sauce
  • Dijon mustard
  • 2 lb Filet mignon or sirloin
  • Remoulade sauce,
  • Cut about 1-in. thick
  • Watercress
  • Selection of sauces

Directions
  • Step #1 1.
  • Step #2 Trim any gristle from the steak, then cut into 1-in.
  • Step #3 cubes.
  • Step #4 Arrange the steak cubes on a platter or individaule plates.
  • Step #5 Garnish with lettuce leaves & watercress, if desired.
  • Step #6 2.
  • Step #7 Spoon the mustard into a very small serving dish.
  • Step #8 3.
  • Step #9 Spoon the sauces into individual serving dishes.
  • Step #10 4.
  • Step #11 Half fill the metal - not pottery - fondue pot.
  • Step #12 Heat the oil in the pot ( or in a saucepan on top of the stove) until it is very hot & beginning to bubble.
  • Step #13 5.
  • Step #14 Place the pot of oil on it's stand over the burner in the center of the table.
  • Step #15 Each diner cooks his own cube of meat on a long-handled fork.
  • Step #16 The meat is dipped into mustard or a sauce before eating.
  • Step #17 This dish: Fondue bourguignonne.
