Beef Stew: Eisenhower's Recipe Recipe

Ingredients
  • 1 Bay leaf
  • 1 tb Vegetable oil
  • 1/4 ts Pepper
  • 1/4 ts Marjoram
  • 1 md Onion; slice
  • 6 md Potatoes; peel, quarter
  • 1 md Green pepper; sliced
  • 2 tb All-purpose flour
  • 2 lb Boneless chuck or beef stew; cut 1-1/2 cubes
  • 2 sm Zucchini or other squash; unpeeled, cut 1 slices
  • 2 ts Salt
  • 2 lg Ribs celery; cut 2 pcs
  • 1/2 c Water

Directions
  • Step #1 In a large skillet over med-heat/flame, thoroughly brown the meat in the oil.
  • Step #2 Sprinkle top half the salt & pepper over the meat.
  • Step #3 Lift the meat into a bowl.
  • Step #4 Saute the onion in the skillet until transparent and lift out into the crockpot.
  • Step #5 In the same skillet swirl the water, scraping up the juices, then turn the liquid into the crockpot.
  • Step #6 Add the marjoram, green pepper, bay leaft, celery, potatoes & zucchini.
  • Step #7 Sprinkle top the rest of the salt & pepper.
  • Step #8 Place the meat on top and cook on low for 8 to 10 hrs.
  • Step #9 Before serving, remove the meat and veggies to a platter & keep warm.
  • Step #10 Skim 2 tb fat from the top of the liquid & heat in a skillet.
  • Step #11 Stir the flour & heat rapidly to make a smooth sauce.
  • Step #12 Simmer until the sauce is as thick as whipped cream, then pour over the meat & veggies.
