Chicken Tortilla Soup
Ingredients
8 Corn tortillas
1 Green bell pepper , sliced
1 ts Cumin
1 1/4 c Enchilada sauce
1 c Corn chips, crushed
1 lg Onion, sliced
1/2 lb Cheddar cheese, grated
1 1/2 lb Ground beef
1/2 lb Monterey jack cheese, grated
1 c Olives, sliced
3 Cilantro sprigs
1 lb Tomatoes
1 tb Chili powder
4 Garlic cloves, sliced
Directions
Step #1 Brown ground chuck; drain any excess fat.
Step #2 Add (sliced) onion, garlic & bell pepper; cook this until soft.
Step #3 Cut tomatoes into chunks & add to beef mixture (including liquid).
Step #4 Add enchilada sauce, chili powder, cumin & cilantro.
Step #5 Add salt and pepper to taste.
Step #6 Bring to a boil; reduce heat & let simmer uncovered for 20 mins.
Step #7 Grease a 3-quart casserole.
Step #8 Steam (or fry) tortillas.
Step #9 Put approx.
Step #10 1/3 of the meat mixture in the casserole dish followed by a layer of tortillas, cheese & olives.
Step #11 Repeat twice.
Step #12 Sprinkle top crushed corn chips around the edges & bake this at 350 degrees F.
Step #13 for 20 mins or until heated through.
Step #14 Cut into wedges.
Step #15 NOTES: A simple Mexican-style casserole with beef & cheese -- This a conglomeration of several of my favorite Mexican casserole recipes.
Step #16 I took what I liked best from each one & this is what it turned out to be.
Step #17 My family devoured it instantly & completely, & it has become one of our favorites.
Step #18 Yield: Serves 4-6.
Step #19 You can adjust the Spice upings to suit your own tastes; I listed conservative amounts (for me, anyway!).
Step #20 You can also add salsa (homemade is best) to the casserole, if desired.
Step #21 serve this with fried rice (plain or flavored) & green salad.
Step #22 : Difficulty: easy.
Step #23 : Time: 15 mins preparation, 20 mins cooking.
Step #24 : Precision: approximate measurement OK.
