Step #1 Yield: 1 Freshly ground pepper Put the dried mushrooms in 1/2 c hot water & let this stand 20 mins.
Step #2 Saute the onion in the oil slowly for 5 mins, then add the tomatos & garlic, & let cook carefully uncovered about 10 mins.
Step #3 Pepper to taste, with any tough stems removed, cut in quarters if large, then add the dried mushrooms, & the mushroom soaking liquid.
Step #4 Cook another 5 mins.
Step #5 preheat your trusty oven to 400F degrees.
Step #6 Line the bottom of 1 1/2 qt casserole with 1 c of the rice, add the cooked beef, the olives, and strew over the top the feta cheese, & half the sauce.
Step #7 Add the remaining rice & the rest of the sauce, & Sprinkle top with Parmesan.
