Beef~ Cauliflower~ & Snow Peas Recipe

Ingredients
  • Fresh ground pepper
  • 2 ts Salt
  • 1 c Chicken broth/stock
  • 1/2 md Cauliflower head, broken into flowerets
  • 1 lb Very thin sliced flank steak
  • 1/4 lb Snow peas, stems removed
  • 1 tb Cornstarch
  • 2 tb Vegetable oil
  • 1/4 c Soy sauce
  • 1/4 c sliced onion
  • 2 Minced garlic cloves

Directions
  • Step #1 Cut steak into 2-inch strips; mix cornstarch & soy sauce & set aside.
  • Step #2 Heat chicken stock & set aside.
  • Step #3 Heat oil in heavy skillet or wok until very hot.
  • Step #4 Add garlic & cook for 2-3 mins.
  • Step #5 Add beef and saute quickly, keeping it moving, just until it loses color, about 30 seconds.
  • Step #6 Add onion, salt & pepper to taste, stirring constantly for another half min or so.
  • Step #7 Add chicken broth, bring quickly to the boil, then add cauliflower pieces, a few at a time.
  • Step #8 Cook 3 mins, then add snow peas, stirring constantly, for another few mins.
  • Step #9 After 7 mins maximum, cauliflower should be tender & pea pods a bright green.
  • Step #10 Add soy sauce mixture, mix thoroughly, & stir until thickened.
  • Step #11 Turn into heavy serving dish & serve as soon as possible.
