Beets & Pineapple Recipe

Ingredients
  • 2 md Onions; sliced thinly
  • 3 md Beets; OR...
  • 1/4 c EDEN Brown Rice Vinegar
  • 2 c Water
  • 1/2 c EDEN Olive Oil
  • 2 tb EDEN Ume Plum Vinegar
  • 6 sm -Beets
  • 1 bn Watercress

Directions
  • Step #1 Boil the whole, unpeeled beets in water for 1 hr or until tender.
  • Step #2 Drain & cool.
  • Step #3 Meanwhile, slice the onions into thin crescents.
  • Step #4 Boil water & cook onion slices 1 min, then drain.
  • Step #5 place this in a salad bowl.
  • Step #6 mix vinegar & oil & pour over onions.
  • Step #7 Set aside to marinate.
  • Step #8 Working with wet hands, peel beets by slipping off their skin & rinse under cold water.
  • Step #9 Slice beets & add to onions.
  • Step #10 Toss carefully & let this stand for 30 mins.
  • Step #11 Serve on a bed of watercress.
  • Step #12 Prep.
